How the PID Works:

Before PID controllers, most espresso machine boilers were controlled by pressurestats—little, basic mechanical switches that turn the heater on when it drops beneath a specific temperature, and back off once it achieves the proper temperature. These systems worked, and still do on many machines, yet they aren’t extremely exact. The boiler needed to drop off beneath a set temperature before turning back on, and kept warming up somewhat past the shut off point on the top end, making temperature solidness very unstable and hard to correctly control.

The addition of a PID controller on La Marzocco Linea espresso machines helped solve this issue in a couple ways: The electronics of the PID is continually examining the temperature of the boiler, constantly turning the boiler controller on and off, and managing it as close as conceivable to the proper working temperature. On top of that the PID controller varies the cycling the heater on and off time, it keenly fluctuates the proportion of "ON" time to "OFF" time. This takes into account control of the measure of energy being put into the heater component and gives PID controllers significantly more fine tuned temperature control.
