Sumatra is the 2nd largest island in the Republic of Indonesia. Sumatra is also the home of Sumatran Mandheling Green Coffee Bean production.

The Mandheling coffee beans are of the Arabica variety of coffee plant. Arabica coffee production makes up 15% of the coffee production in all of Indonesia. For this coffee, it is grown on Mount Leuser slopes in west central Sumatra in what is referred to as the Batak region of Sumatra. This area is very close to the Padang port.

Mount Leusers’ volcanic slopes provide a rich soil for the coffee growers in the region. The elevation allows the proper development of coffee cherries that produce perfect coffee beans.

The Acidic Properties of Sumatran Mandheling Green Coffee Beans

Mandheling is one of the low acid coffee varieties produced by the Arabica plants. The soil and growing conditions of the coffee plants are what determines the acidic properties of the coffee beans and subsequent coffees brewed from the beans.

The Processing of the Sumatran Mandheling Green Coffee Beans

Sumatran Mandheling coffee is often referred to as contentious or provocative, and maybe even prickly. Why? The method of processing of the coffee beans plays a large part in the flavors of the coffee. The Mandheling coffee beans are processed in a wet hulling process known as GilingBasah.

The wet hulling process is done when the beans are placed in water and bathed so that the seeds or beans are removed from the cherry or fruit of the coffee plant. Once the seeds or beans have been removed they are soaked for an additional period of time in water so that the mucilage is easier to remove from the beans. Then the beans are typically sun dried and packaged for market or exportation.

When coffee beans are processed in this manner they retain a larger amount of moisture than when they are dry processed. (Dry processing allows the beans to lie in the sun until the coffee cherry dries up and exposes the beans, which naturally removes some of the natural moisture from the beans.)

The Flavors of Sumatran Mandheling Green Coffee Beans

The wet processing of the coffee beans creates a herbaceous, earthy, mushroom like flavor to the beans. This earthy flavor is embraced by some as being unique, tantalizing, and provocative. Others find the earthy and herbaceous flavors to be off putting.

The people who embrace the earthy herbaceous undertones of the coffee beans will often roast their beans to a dark roast in order to enhance these flavors. The darker that the beans are roasted the more of a herbaceous undertone that is detected.
